unexpected guest ...
Tuesday night our cat brought us home a gift. He meowed at the door, walked in, and proudly dropped his present on the kitchen floor. We all looked down in disbelief. A teeny tiny baby bunny. Unhurt and perfect.
Out goes the cat, out come the rubber gloves, and our rescue mission began. We placed the bunny in a box and then went outside to try to find the bunny nest. We knew the approximate area, but still couldn't locate it. Soon darkness came, and we knew we had to keep the bunny safely indoors for the night.
We bought some baby formula and an eye dropper, and attempted to feed it with no success. This went on for two days. Finally we began discussing where we should bring the poor little thing, before he starved to death. Then alas, he began drinking out of the dropper. It was the cutest, most amazing thing to watch.
We are now on day four, and the sweet little thing is doing remarkably well. He sleeps in his box with a little stuffed bunny, and readily drinks out of the dropper. He is comfortable being around humans, which is a good thing as my house can become very rowdy at times.
We are taking things day by day, and hopefully will watch it thrive. We're still unsure if it is a temporary or a permanent guest, but I'm kind of falling in ♥. Of course we will do what is best for the little creature, but I know what outcome I'm hoping for.

Fabulous Friday Finds ...
... Let's Celebrate Earth Day!
Earth Day falls on April 22 each year, but did you know that the very first Earth Day movement took place that same day back in 1970? 20 million Americans held demonstrations and protests to spread the word about environmental hazards, and the need for change.
This movement continues today, but it is now more of an everyday contientious choice. A choice to make certain decisions which impact our environment, in hopes that the earth will be a healthy place for our future generations.
So in celebration of this worldwide movement, I have chosen the theme of my weekly Fabulous Friday Finds to be all eco-friendly products. Each item is either eco-friendly, repurposed, or both.
As usual each product is an item found on Etsy. All items are numbered, so if you'd like to see more from a particular shop, the links are listed below the collage.

Recipe Time!
Last night was one of those nights when I had no idea what to make for dinner. We're still dealing with the allergic reaction Autumn has been suffering from since the weekend, which by the way turned out to be a bad case of poison ivy. So instead of grocery shopping, we've been doctor and pharmacy visiting. Normally I plan my meals for the week ahead of time, but this week we've just been winging it.
As I wearily browsed online trying to find something easy, fast, and tasty, I came across a recipe for "Easy Taco Rolls". Normally I probably wouldn't have attempted this recipe, but because it had good reviews I gave it a shot. Thankfully I did because it was everything I was looking for ~ easy, fast, and tasty, and inexpensive as well :)
So I now share this recipe with you ~ Enjoy :)
1/2 cup uncooked instant brown rice
1 cup water
1-1/2 lbs ground beef
1 packet of lower sodium taco seasoning mix
1 15 oz can black beans, drained and rinsed
1/2 cup water
1-1/2 cups shredded cheddar cheese
8 10" tortillas (either flour or whole wheat)
1 16 oz jar salsa
1-1/2 cups shredded cheddar cheese
Directions:
1} Preheat over to 450 deg. Spray two 7-1/2 x 11" baking dishes.
2} Cook rice according to package directions
3} While rice is cooking brown ground beef and drain any excess grease
4} Reduce heat to medium and stir in taco mix, black beans, 1/2 cup water, 1-1/2 cups shredded cheese, and the cooked rice. Cook and stir until the cheese is melted, and the beans are hot.
5} Spoon mixture into the tortillas, roll into a tight cylinder, and place into a baking dishes. I placed four tortillas in each dish.
6} Pour the salsa over the tops, and sprinkle evenly with 1-1/2 cups shredded cheddar cheese.
7} Bake until the cheese has melted and begins to brown, approx 10 minutes.

Jumbo Chocolate Chip Muffins
Last weekend Autumn requested that I make chocolate chip muffins. I decided as long as I was going to bake muffins, I should make them nice and big like a bakery muffin. (I believe things are always better when the are either miniature or jumbo :)
To do this I simply used one of my favorite products ~ Reynolds' Jumbo Foil Baking Cups.
I love these because there is no need for muffin tins. You just place the cups right on a baking sheet and that's it. In my opinion this makes clean-up so much easier, and everything less messy.
Jumbo Chocolate Chip Muffins
Yields 18-21 Jumbo Size Muffins
Bakes at 375 deg. 12-17 minutes
Ingredients:
4 cups flour
2/3 cups light brown sugar, packed
2/3 sugar
4 tsp baking powder
1 tsp salt
1 cup unsalted butter, melted and cooled
4 eggs, lightly beaten
1-1/3 cups milk
3 tsp vanilla
1 pkg mini semi-sweet chocolate chips
Directions:
1} Preheat oven to 375 deg. Set out jumbo foil muffin cups on baking sheet.
2} In a large bowl thoroughly mix together dry ingredients; set aside.
3} In a medium bowl melted butter, eggs and vanilla until well combined
4} Make a well in the dry ingredients and pour liquid ingredients into the well. Stir until ingredients are just combined ~ do not over mix.
5} Fold in chocolate chips
6} Fill foil cups approx 3/4 full of batter. Bake 12-17 minutes, or until tops are slightly browned and a toothpick inserted in the middle comes out clean.

Major Manic Monday
Today I'm blogging from the Pediatricians office where Autumn and I ended up early this morning.
Poor thing had an allergic reaction to something outdoors over the weekend. Her entire face puffed up and it was pretty scary.
She just received a Benadryl shot and a steroid shot. Hoping things will get better shortly. Wish us luck, this is a tough one.
