White Chocolate Salted Caramel Gooey Bars...

You may recall my post from last week where I couldn't decide what to make for Easter dessert.  It took me quite awhile, but I had finally narrowed it down to four lovely choices which you can view here.  And after all that work guess what? I completely changed my mind!  Good thing as women we can do that sort of thing lol.

So, what was my final decision? The sweetest, gooeyist, yummiest dessert ~ White Chocolate Salted Caramel Gooey Bars!  They were so sweet that a very small piece would satisfy even the most stubborn sweet tooth!

Now here's the recipe ~ proceed if you dare ;)

    • Ingredients 

    • ½ Salted Caramel Sauce (Homemade Sauce: http://www.pink-parsley.com/2012/02/salted-caramel-brownies.html) or store-bought caramel sauce.
    • 2 C plus 2T all purpose flour
    • ½ tsp baking soda
    • ¾ tsp salt
    • 12 T unsalted butter, melted and cooled til warm
    • 1 C light brown sugar, packed
    • ½ C granulated sugar
    • 1 large egg plus 1 egg yolk
    • 2 tsp pure vanilla extract
    • 1-½ C white chocolate chips
    • Coarse sugar or colored for sprinkling
    • Coarse or flaked sea salt for sprinkling
  • Instructions

    1. 1. Prepare the Salted Caramel Sauce
    2. 2. Preheat oven 325 deg F. Line an 8×8-inch baking pan with aluminum foil so that the edges of the foil overhang two sides of the pan, and spray foil with cooking spray.
    3. 3. In a medium bowl, whisk together the flour, baking soda, and salt.
    4. 4. In the bowl of a stand mixer fitted with paddle attachment, or in a large bowl with a hand mixer, on medium speed, beat together the butter, brown sugar, and granulated sugar.
    5. 5. Beat in the egg, yolk, and vanilla until just combined
    6. 6. Reduce the mixer speed to low, and add the dry ingredients to the wet ingredients until just combined- don’t overbeat!
    7. 7. Stir in the white chocolate chips
    8. 8. Dampen your fingers and press half of the dough into the bottom of the prepared pan.
    9. 9. Pour the caramel sauce over the dough and spread evenly.
    10. 10. Drop remaining dough in clumps over the caramel, the dough will bake together
    11. 11. Bake for 30-35 minutes until a toothpick comes out clean.
    12. 12. As soon as the bars come out of the oven, sprinkle the top with the sugar and sea salt.
